They don't need to be "reliable goalscorers", they need to keep generating pressure on the opposition and creating chances. Was Xhaka a reliable goalscorer before scoring 7 last season? No, but it was pretty much inevitable for him to score a bunch with the amount of chances he was getting.
Xhaka's xG was 5.
He just had a very good season he was unlikely to repeat, hence why they went out and signed a much better midfielder.
I think Woolwich could struggle to score nearly as many this season. They'll get top 4 but Odegaard won't score as many for sure, Martinelli probably not either. It's an issue for them. Other than Saka and Jesus I don't see anyone in their side who is practically nailed on for double figures.

5 from the midfield is a good tally for a player not noted for his scoring prowess. You can also look at Brighton if you want another great example of a team with decent but not incredible players who scored a shitload just because they generated so much pressure on the opposition's goal.
Yeah he's also a 31 year old pace reliant player coming off his worst ever season. Take away penalties from at least one of Maddison/Richarlison and bye bye to some of the double digit seasons. They were also the main man at each club and everything went through them. Richarlison scored 1 league goal last season and is no longer the head honcho.
And don't even bother with Perisic. He scores more than 5 and I'll send you a cake.

Once you get everybody chipping in they soon start to add up. So long as they're match-winning goals we don't necessarily need someone to be clocking up hatricks.... That's just icing.
