Surely, surely THFC have a say in what we get? I very much doubt it's 100% Nike's decision.

I assume Nike put together a selection of designs which they present to the club and that person/group of people then decide which kits to actually use. I assume Nike are given a brief by the club, but I really don’t know.
Nike can make some half decent kits, it’s just that we don’t get them so as you suggested it’s probably partly down to the club too
