Seems Ange really likes Gallagher's off the ball work from reports. It is very good (by far the best part of his game tbf) and the HG factor is nice. I'm just not convinced and if he has a slow start the fans will be impatient with him due to Chelsea factor.
I've come round on him a bit more lately though.
Right now, Gallagher adds more to the attack and is the best pressing midfielder in the world (according to advanced stats).
So yeah, currently it's a big upgrade on Sarr

I'd rather have Sarr/Gallagher as the 8's and Bissouma as the 6 than Maddison in there at the moment, with Maddison being rotated and having to win his spot back. We need competition in there. Gallagher obviously suits what we want to do with the high intensity game and yeah, he gets forward and has a worldie in his locker too.
Maybe I'm alone, but I like the option of a Sarr/Gallagher double pivot also. Doesn't have to be either or. Similar to how Gallagher and Caicedo was looking like becoming something good in the last few weeks for Chelsea.
Someone posted a screenshot from the Burnley or Villa game where Biss was forward pressing oop and Sarr using his athleticism to cover in the 6 position.
Not saying I disagree with your point but Sarr and Gallagher could easily rotate roles during the game and make us a real problem OOP. We’d need Maddison in possession to be press resistance if we ever played them together though
