You certainly can argue with that approach. Some of the bodies we have available in midfield are either shite or wildly inconsistent.
Then just imagine how shitty Bissouma would look like forced to play as CB, when Gray got injured while playing as CM, and lets say one of Danso or Davies got injured as well.
Its all theory cause ofc Gray can get injured while playing as CB as well. But obviously we can see risk management here.

Looks very composed, good touch, good dribbling and good passing, decent standing tackle. Not sure if so good at receiving back to goal and turning with it which our DM needs. Not overly quick, strong or big leap but is only 18 so will hit physical peak at 21.
Good player but hype has been too much. Seems to be getting hyped just because he's an 18 and he's been playing out of position. Don't get me wrong he's been ok but ppl have been deducing from that and his age that he will be a world beater. Really need to see him at RB, DM and CM first before we can say that.
