I wouldn’t say that's far fetched in the slightest. I'm sure Tottenham Hotspur Stadium Ltd would already have a analytics team tasked with collating and monitoring the spending habits of the different demographics who frequent the arena.
In fact when I was still a member I remember the club sending me one of those long drawn out surveys asking everything from household income to daily newspaper choice to eating habits etc.....
