Dembele was a really good example to bring up. He was elite at progressing the ball up the pitch. But that progression wasn't during the build up phase, it was after that when we had the ball on the half way line and beyond. It absolutely happens in the build up phase because that's where the greatest risk is. If you're trying to play through a press you need technically secure players in the first phase who can receive under pressure, manipulate the opposition, and move the ball quickly in tight spaces. Di Zerbi's entire objective is to bait the press create overloads and then play through the press, it's not merely about moving the ball around, you need to take risks.
That's why the most technical players are often involved deepest in possession...look at Pep's sides, as I said Rodri and Bernardo Silva are central to the build up because they're absolutely elite at receiving, retaining, and progressing the ball under pressure. Semenyo or Haaland are far more direct and naturally lose possession more often but that's acceptable because they're operating much further from their own goal.
Losing the ball 20 yards from the opposition box is completely different from losing it 20 yards from your own. The closer you are to your own goal, the higher the technical security required. That's why elite possession coaches prioritise technicians in the build-up phase.
It's all moot anyway - Gallagher isn't going to be building up under De Zerbi if he has any sense and hasn't been anyway, he used Porro and Bentancur in his build up over Gallagher since he's been here, speaks volumes
When he had the ball in the build up phase he was mostly playing it sideways and backwards as you're supposed to do. You usually progress the ball in that phase by playing down the line. That's not to say he didn't beat the press in that first phase. Of course he did at times but that doesn't happen a lot in a game. He showed how brilliant he was after that phase when we reached the opposition half. That's what he was able to do consistently and what made him a great player.
Silva and Rodri retain possession well in build up but Silva's quality shines through higher up the pitch. Rodri plays deeper because he's really good off the ball but he also chips in with goals and assists, as does Silva.
