"Ref's" would be a possessive noun -- as in, "the ref's whistle" -- which, in this context, it isn't.

You're using ref's (incorrectly IMO) to denote plurality.

Plurality, yes, but the apostrophe is for the truncation, not because of the plurality.

Tell me, what is the difference grammatically between:

Ref’rees
Ref’s

I don’t see any? Both are a truncation of referees, both have apostrophes.
