What is it with brits and yanks and fad diets. Just eat like your grandparents did. I eat a more or less 100% Mediterranean spanish and will live to. 110I had COVID over two months ago. Found the post viral fatigue was at its worst about a month after, though I might have not taken enough time off sick. Gradually getting my energy back, it's a slow process. Am also a lot weaker than before in terms of muscle strength. I tried going back on the keto diet but it seemed to make things worse in terms of energy. Hope you get better soon.

Fish, not bad, my kids get it from me (chiefly/ideally arctic salmon, I'm intolerant and long term veggie). Chicken is OK, but the fats are not as favourable as via plant IMO, which is an oxidative stain on performance.
Plant proteins, if you want career longevity, is the way forward. Some may be better on some animal protein, Type O's and whilst transitioning.
Everyone is different, but I believe the de facto model of athletic performance does not include much/any meat.
Low starch carb also, so my thoughts are complicated.
