He is getting closed down by 2 players most games because teams know he is the only attacker who can maybe do something. Even the Brentford manager spoke about it in his post match interview.

I'm not convinced that Frank wouldn't turn Wharton into a sideways-backwards passing merchant; but a deep playmaker is the most urgent need regardless of who's in charge. How many times have we seen this so far this season?
It hasn't been much better with other players in place either; this is not specifically a Bentancur-Palhinha issue even though they've become the poster children.
We don’t actually need a “playmaker” as such, just some midfielders who are varying degrees of press resistant, mobile/athletic who can actually pass the ball forwards with some reliability (preferably to players who are coached to move to receive it).
We saw the other night how Wharton’s efficacy gets somewhat diminished against a deep-ish block (he’s much better suited to Palace’s normal counter attacking game). Anderson would be ideal but it looks like he’s off to City.
I dont mean to be unkind but I watched all his training footage. He will never be a premier league centerback he's too frail. He'd get battered. He looked utterly overwhelmed from day one I knew he'd never play a first team game for us.

Ok so, excuse my ignorance but this exact situation does my nut.
Never played a high level and don’t understand football like a lot on here but is that not repetitive tentative decision making from the CBs? I see 3 easy passes that could have been played to the midfield 2 and all of them were ignored.
